A moist, fluffy oil-based banana cake.

Ingredients
  • 2 large eggs
  • ½ cup buttermilk
  • ⅓ cup Rice Bran Oil
  • 2 bananas (very ripe)
  • 1 tspn vanilla essence
  • ⅓ cup dark muscovado sugar
  • ⅓ cup raw sugar + 1 tspn
  • 1 cup self-raising flour
  • ½ cup wholemeal self-raising flour
  • ¼ tspn nutmeg
  • ½ tspn cinnamon
  • 1 tspn desiccated coconut
Method
  1. Heat the oven to 180 degrees centigrade.
  2. Line and grease a loaf tin.
  3. Whisk together the eggs, buttermilk, bananas and vanilla.
  4. Add the sugars (leaving aside 1 tspn of raw sugar) and beat well until the sugars have dissolved.
  5. Add the flours and spices until combined.
  6. Pour batter into prepared tin and sprinkle raw sugar and coconut on the top. Bake for 35-40 minutes until cooked.
  7. Allow to cool for 10-15 minutes before removing from the tin.
Notes
Optional additions: - a handful of chocolate chips - 2 tbspns desiccated coconut - zest of one lemon - ¼ cup currants - ¼ cup roughly chopped nuts (almonds, walnuts or hazelnuts) - 2 tbspns pumpkin seeds
