Melt in your mouth macaroons by Claudia Roden. Naturally gluten-free, quick, simple and delicious.

  • 400g almond meal
  • 150g caster sugar
  • zest of one lemon, finely grated/chopped
  • 2-3 drops of almond essence
  • 2 egg whites
  • icing sugar to coat

  2. Pre-heat your oven to 180 degrees (200 if not fan-forced)
  3. Combine all ingredients except icing sugar in the bowl of your mixer or food processor (whatever is easiest).
  4. Everything should combine nicely to create a moist dough.
  5. Roll into walnut sized balls (or any shape you want, really).
  6. Dip the bottom in the icing sugar, lightly flattening the base.
  7. Put on a baking tray, icing sugar side down, and roll the rest of the dough.
  8. Pop into the oven for about 12 minutes. They should be lightly browned and still a bit gooey in the centre when done.
  9. Leave to cool on the tray and then pop them in an airtight container. Will keep for a few days.
  10. Serve with a cuppa, put your feet up and enjoy.
